Every once in a while, another pitmaster sees you filming somewhere else and says four magical words:
“Come try ours instead.”
That’s exactly what happened at Windy City Smokeout with Hoodoo Brown BBQ in Ridgefield, Connecticut.
We were already reviewing another barbecue restaurant when the crew invited us over to taste one of their specialty creations. Thankfully, we listened.
The Beef Birria Sausage Sandwich
The star of our visit was the Beef Birria Sausage Sandwich, a creative mashup that somehow manages to combine Texas barbecue with traditional Mexican birria into one ridiculously satisfying sandwich.
The sausage is made in-house and seasoned with classic birria spices before being smoked. It arrives with a side of rich, flavorful consommé for dipping the same broth traditionally served alongside birria tacos.
Mike had never experienced anything quite like it.
Living in New York, he’s eaten plenty of great food, but this combination genuinely surprised him.
His verdict?
“One of the best combinations I’ve ever had.”
The smoky sausage, rich beef flavors, warm spices, and savory consommé all worked together perfectly. It wasn’t gimmicky. It wasn’t trying too hard.
