One thing we love about barbecue festivals is finding dishes that break the traditional mold without forgetting what made BBQ great in the first place.
Hurtado Barbecue’s Al Pastor Pork Belly Fried Rice does exactly that.
Mike thoroughly enjoyed this dish from the first bite. The smoked pork belly brings rich, buttery flavor while the al pastor seasoning adds a bright, slightly sweet, savory punch that keeps every bite interesting. Instead of simply serving smoked meat over rice, Hurtado layers classic Central Texas barbecue techniques with Mexican-inspired flavors and fried rice to create something completely unique.
The smoke is present but never overwhelming, allowing the seasoning and rice to complement the pork instead of competing with it. It’s filling without feeling heavy and stands out as one of the more original dishes we sampled during Windy City Smokeout.
Hurtado has built its reputation on what they call “Tex-Mex BBQ” combining slow-smoked Central Texas barbecue with Mexican flavors and this dish showcases that philosophy perfectly. What started as pop-up barbecue has grown into four Texas locations and an official partnership as the barbecue restaurant of the Texas Rangers.
